If I were to write "Imagine, America showing brains, now that is something unusual enough to write home about", would that be taken as a witty remark, or a slur on millions of people based on prejudice and ignorance?

What I can say is that the French are certainly more likely to show guts and brains on the dinner plate, literally.

Well, proper sausages will be formed in gut whether in France or the UK or anywhere else (I reserve judgement on whether the US has 'proper sausages'. Much processed meat will include 'mechanically removed meat', which will be whatever bits are hanging around after slaughter and removal of the main cuts.
At least the French are open about what is going on to the plate.
